Soba Noodles with Sesame Chicken

Soba Noodles with Sesame Chicken

This meal offers a rich sweet and savory taste that is accented by sesame seeds, ginger, and olive oil. With sauteed chicken, soba noodles and mixed greens you'll be able to make a healthy, delicious, and filling meal.
Ingredient:
8 oz Soba Noodles 3 tbsp Soy Sauce 3 tbsp Brown Sugar 1 lb Chicken Breast (boneless and skinless) 2 tbsp Sesame Seeds 1 tbsp Ginger (finely grated) 3 tbsp Rice Vinegar 1/2 cup Olive Oil 7 oz Packaged Mixed Greens 3 Carrots (shredded or striped) 1/4 Sweet Onion (thinly sliced)
Direction:
1. Rinse noodles under cold water and cook according to the package directions. 2. In a large skillet add soy sauce and brown sugar on medium heat. 3. Add the chicken and saute until cooked through about 1 1/2 minutes per side. Transfer to a bowl and repeat with the remaining chicken. 4. Sprinkle the sesame seeds over the chicken and toss to coat. 5. In a small bowl, mix the ginger, vinegar and oil. 6. Separate the greens, carrots and onions among the plates. Top with the soba noodles and chicken. Serve with the vinaigrette.
